A simple recipe for very soft, moist banana bars designed to be easy to chew and digest, perfect as a comforting treat.

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups very ripe mashed bananas (about 3 medium)
  • 1/4 cup milk
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Stir in the mashed bananas and 1/4 cup milk until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the batter is smooth. Do not overmix.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  9. Let the bars cool completely in the pan on a wire rack.
  10. While cooling, whisk together the powdered sugar and 1 tablespoon of milk to make a thin glaze.
  11. Drizzle the glaze over the cooled bars. Cut into squares.

Notes

  • For an even softer texture, you can substitute half of the all-purpose flour with cake flour.
  • If you prefer a less sweet bar, reduce the granulated sugar by 2 tablespoons. The texture will remain soft due to the bananas.
  • To keep the bars extra moist, store them covered tightly at room temperature for up to 3 days.
