1 pound boneless, skinless chicken breast, cut into 1-inch pieces
1 large egg white
1/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
1/2 cup orange juice, fresh or bottled
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 teaspoon sesame oil
1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
Orange zest from 1 small orange
Instructions
In a medium bowl, whisk the egg white until slightly frothy.
In a separate shallow dish, combine the flour, 1/4 cup cornstarch, salt, and pepper.
Dip each chicken piece first into the egg white, then dredge thoroughly in the flour mixture, shaking off excess.
Lightly spray the air fryer basket with cooking spray. Arrange the coated chicken pieces in a single layer, working in batches if necessary. Do not overcrowd the basket.
Air fry at 380 degrees F for 10 to 12 minutes, flipping halfway through, until the chicken is cooked through and golden brown. Spray lightly with cooking spray halfway through cooking for extra crispness.
While the chicken cooks, prepare the sauce. In a small saucepan, combine the orange juice, sugar, soy sauce, rice vinegar, ginger, garlic, and orange zest. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
Whisk the cornstarch slurry into the simmering sauce. Cook for 1 to 2 minutes, stirring constantly, until the sauce thickens enough to coat the back of a spoon. Remove from heat and stir in the sesame oil.
Place the cooked chicken bites into a large bowl. Pour the warm orange sauce over the chicken and toss gently until all the pieces are evenly coated.
Serve immediately.
Notes
For extra crispy chicken, toss the coated pieces with a light coating of oil before air frying.
If you do not have an air fryer, you can bake the chicken at 400 degrees F for 18 to 20 minutes, flipping halfway.
Substitute low-sodium soy sauce if you prefer less salt.
