Ingredients

Scale
  • 3 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat your oven to 425 degrees F. Line a large baking sheet with foil. Place a wire rack on top of the prepared baking sheet.
  2. Pat the chicken wings completely dry with paper towels. This step is crucial for crispiness.
  3. In a large bowl, toss the dried wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the seasoned wings in a single layer on the wire rack. Do not overlap them.
  5. Bake for 25 minutes. Flip the wings over. Bake for another 20 minutes.
  6. While the wings bake, prepare the sauce. In a small saucepan, combine the honey, ketchup, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, and onion powder.
  7. Bring the sauce to a simmer over medium heat, stirring often. Cook for 3 to 5 minutes until slightly thickened. Remove from heat.
  8. Once the wings are cooked through and appear crispy, remove them from the oven.
  9. Place the hot wings into a large bowl. Pour about half of the prepared BBQ sauce over the wings. Toss gently until every wing is coated.
  10. Return the sauced wings to the wire rack on the baking sheet.
  11. Bake for an additional 8 to 10 minutes. This sets the glaze.
  12. Remove from the oven. Toss the wings with the remaining sauce right before serving for maximum stickiness.

Notes

  • Using baking powder helps dry out the skin, creating a crispier surface when baked.
  • Do not skip the second bake after saucing; this caramelizes the glaze.
  • For extra heat, add a pinch of cayenne pepper to the sauce ingredients.
