1 loaf (about 1 pound) thick-cut brioche or challah bread, cut into 1-inch slices
6 large eggs
2 cups eggnog (full fat works best)
1/2 cup milk (whole milk recommended)
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Pinch of salt
Butter or nonstick spray for the baking dish
Instructions
Lightly grease a 9×13 inch baking dish with butter or nonstick spray.
Arrange the bread slices in a single layer in the prepared dish. You may need to slightly overlap them.
In a large bowl, whisk together the eggs, eggnog, milk, sugar, vanilla extract, nutmeg, cinnamon, and salt until well combined.
Pour the eggnog mixture evenly over the bread slices, ensuring all pieces are coated. Gently press down on the bread so it soaks up the custard.
Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight (up to 12 hours).
When ready to bake, preheat your oven to 375 degrees F (190 degrees C). Remove the plastic wrap.
Bake uncovered for 40 to 50 minutes, or until the French toast is puffed, golden brown, and the center is set.
Let it rest for 5 minutes before slicing and serving.
Notes
For an extra special topping, dust with powdered sugar or drizzle with maple syrup just before serving.
If the top browns too quickly during baking, loosely cover the dish with foil for the remaining cook time.
Use day-old bread if possible; it absorbs the custard better without becoming too soggy.
