This is a rich, sweet, and savory Southern-style pineapple casserole, similar to recipes popularized by Paula Deen, featuring crushed pineapple and a buttery Ritz cracker topping.

  • 1 (20 ounce) can crushed pineapple, drained
  • 1 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1/2 cup all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, melted, plus 2 tablespoons for topping
  • 1 cup Ritz cracker crumbs (about 30 crackers)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease an 8×8 inch baking dish.
  2. In a large bowl, combine the drained crushed pineapple, sugar, beaten eggs, flour, 1/2 cup melted butter, and vanilla extract. Mix until just combined.
  3. Pour the pineapple mixture into the prepared baking dish.
  4. In a small bowl, mix the Ritz cracker crumbs with the remaining 2 tablespoons of melted butter until the crumbs are evenly coated.
  5. Sprinkle the buttery cracker mixture evenly over the top of the pineapple mixture in the baking dish.
  6. Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is set.
  7. Let the casserole cool for 10 minutes before serving.

Notes

  • Drain the crushed pineapple well; excess liquid can make the casserole watery.
  • You can substitute saltine crackers for Ritz crackers if needed, but adjust the added salt if you use salted crackers.
  • This casserole is best served warm as a side dish or a sweet dessert.
