1 cup all-purpose flour
1 cup granulated sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
6 cups sliced fresh or frozen peaches (about 2 lbs)
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together the flour, 1/2 cup of the granulated sugar, baking powder, and 1/2 teaspoon salt.
In a separate small bowl, combine the milk and 1/4 cup melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
In a 9×13 inch baking dish, combine the sliced peaches, lemon juice, cinnamon, nutmeg, 1/4 teaspoon salt, and the remaining 1/2 cup granulated sugar. Toss gently to coat the peaches.
Dot the top of the peach mixture with the 2 tablespoons of butter pieces.
Pour the batter evenly over the peaches and butter.
Bake for 35-45 minutes, or until the topping is golden brown and the cobbler is bubbly.
Let it cool slightly before serving warm.
Notes
For an extra boost of flavor, add a splash of vanilla extract to your batter.
If using frozen peaches, do not thaw them completely before adding to the baking dish.
Serve warm with vanilla ice cream or whipped cream for the ultimate treat.
