These peanut butter banana blondies are a chewy, rich, and dense bar cookie. They offer a delightful nutty sweetness perfect for a satisfying treat.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup peanut butter, creamy or crunchy
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup chopped peanuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and granulated sugar until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate small bowl, whisk together the baking powder and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. Gently fold in the peanut butter and mashed bananas until evenly distributed.
  7. If using, stir in the chopped peanuts.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  10. Let the blondies cool completely in the pan on a wire rack before cutting into squares.

Notes

  • For an extra peanut butter flavor, you can drizzle melted peanut butter over the top before baking.
  • Ensure your bananas are ripe for the best flavor and texture.
  • If you prefer a fudgier blondie, you can slightly underbake them.
