3 ripe bananas, mashed
1/3 cup melted butter
1/2 teaspoon baking soda
Pinch of salt
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup creamy peanut butter
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 4×8 inch loaf pan.
In a large bowl, mash the ripe bananas with a fork until mostly smooth.
Stir in the melted butter, baking soda, salt, sugar, egg, and vanilla extract. Mix well.
Fold in the flour until just combined. Do not overmix.
Gently swirl in the peanut butter.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
Ensure your bananas are very ripe for the best flavor and sweetness.
For an extra peanut butter flavor, you can add a few dollops of peanut butter on top of the batter before baking.
