Ingredients
Scale
1 cup rolled oats
1/2 cup protein powder (vanilla or unflavored)
1/4 cup peanut butter
1 ripe banana, mashed
1/4 cup milk (dairy or non-dairy)
1 tablespoon honey or maple syrup (optional, for sweetness)
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
In a medium bowl, combine rolled oats and protein powder.
Mix everything together until well combined. The mixture should be thick but pliable. If it’s too dry, add a little more milk; if too wet, add a bit more oats or protein powder.
Press the mixture evenly into a small baking dish lined with parchment paper, creating a layer about 1/2 inch thick.
Refrigerate for at least 30 minutes, or until firm.
Cut into bars.
Notes
For a nut-free option, use sunflower seed butter.
Add-ins like chocolate chips or chopped nuts can be mixed in for extra texture and flavor.
Store bars in an airtight container in the refrigerator for up to a week.
