1 cup mashed ripe bananas (about 2-3 bananas)
1/2 cup creamy peanut butter
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking soda
2 cups rolled oats
1/2 cup mini chocolate chips
Instructions
Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, letting some overhang for easy removal.
In a large bowl, mix the mashed bananas, peanut butter, maple syrup, and vanilla extract until smooth.
In a separate small bowl, whisk together the salt and baking soda. Add this mixture to the wet ingredients and stir well.
Add the rolled oats to the wet mixture. Stir until everything is just combined. Do not overmix.
Fold in the mini chocolate chips gently.
Press the batter evenly into the prepared baking pan. It will be thick.
Bake for 20 to 25 minutes, or until the edges are set and lightly golden.
Let the bars cool completely in the pan before lifting them out using the parchment paper overhang.
Cut into 12 or 16 bars. Store leftovers in an airtight container.
Notes
Use very ripe bananas for the best flavor and moisture.
For extra richness, use natural, unsweetened peanut butter.
