Satisfy your chocolate and peanut butter cravings with this crunchy Peanut Butter Cup Granola. It’s a delightful mix of oats, peanut butter, and mini chocolate cups baked into perfect clusters.

Ingredients

Scale
  • 2 cups rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, peanut butter, honey or maple syrup, vegetable oil, vanilla extract, and salt. Stir until everything is well combined.
  3. Spread the mixture evenly onto the prepared baking sheet.
  4. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and toasted.
  5. Remove from the oven and let it cool completely on the baking sheet. The granola will crisp up as it cools.
  6. Once cooled, gently stir in the mini chocolate chips.
  7. Store in an airtight container at room temperature.

Notes

  • For extra crunch, bake for an additional 5 minutes, but watch carefully to prevent burning.
  • You can add other mix-ins like chopped nuts or dried fruit after the granola has cooled.
  • Ensure the granola is completely cool before adding chocolate chips to prevent them from melting.
