2 cups rolled oats
1/2 cup peanut butter
1/3 cup honey or maple syrup
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup mini chocolate cups, chopped
Instructions
Preheat your oven to 300°F (150°C).
In a large bowl, combine rolled oats, peanut butter, honey or maple syrup, vegetable oil, vanilla extract, and salt. Mix well until everything is evenly coated.
Spread the mixture in a single layer on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
Let the granola cool completely on the baking sheet. It will crisp up as it cools.
Once cooled, gently stir in the chopped mini chocolate cups.
Break the granola into clusters and store in an airtight container.
Notes
For a firmer granola, bake for a few extra minutes, but watch closely to prevent burning.
You can add other mix-ins like nuts or dried fruit after the granola has cooled.
Ensure the granola is completely cool before adding chocolate to prevent melting.
