1/2 cup peanut butter powder
1 scoop protein powder (vanilla or unflavored)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup honey or maple syrup
1/4 cup unsweetened applesauce
1/4 cup milk
1 large egg
1 teaspoon vanilla extract
Optional: 1/4 cup chocolate chips or chopped nuts
Instructions
Preheat your oven to 375°F (190°C). Grease or line a muffin tin.
In a large bowl, whisk together the flour, peanut butter powder, protein powder, baking powder, baking soda, and salt.
In a separate bowl, whisk together the honey or maple syrup, applesauce, milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Fold in any optional mix-ins like chocolate chips or nuts.
Divide the batter evenly among the muffin cups, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
You can use natural peanut butter instead of peanut butter powder, but you may need to adjust the liquid content.
For a gluten-free option, use a gluten-free all-purpose flour blend.
