  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 8 ounces dried noodles (such as spaghetti, linguine, or ramen)
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 1/4 cup chopped fresh cilantro, for garnish
  • 1/4 cup chopped roasted peanuts, for garnish
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup warm water (or more, to reach desired consistency)

Instructions

  1. Cook the noodles according to package directions. Drain and set aside.
  2. While the noodles cook, prepare the peanut sauce. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, ginger, and garlic. Gradually whisk in warm water until the sauce is smooth and reaches your desired consistency.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  4. Add the sliced red bell pepper and broccoli florets to the skillet with the chicken. Stir-fry for 3-4 minutes, until the vegetables are tender-crisp.
  5. Add the shredded carrots and cook for another minute.
  6. Add the cooked noodles and the prepared peanut sauce to the skillet. Toss everything together until the noodles and vegetables are well coated in the sauce.
