  • 1 cup pepitas (pumpkin seeds)
  • 1/2 cup dried cranberries
  • 1/4 cup honey
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Spread the pepitas on a baking sheet and toast them in the oven for 8-10 minutes, until fragrant. Let them cool slightly.
  3. In a medium bowl, combine the toasted pepitas and dried cranberries.
  4. In a small saucepan, gently warm the honey and almond butter over low heat until smooth and combined. Do not boil.
  5. Stir in the vanilla extract and salt.
  6. Pour the honey-almond butter mixture over the pepita and cranberry mixture. Stir well to ensure everything is evenly coated.
  7. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, forming clusters.
  8. Bake for 12-15 minutes, or until the edges are lightly golden and the clusters are set.
  9. Let the clusters cool completely on the baking sheet before handling.
