Enjoy a festive and comforting Peppermint Eggnog French Toast Bake. This easy casserole is perfect for holiday mornings, using up leftover eggnog for a delightful sweet breakfast.

  • 1 loaf (16 ounces) challah or brioche bread, cut into 1-inch cubes
  • 4 large eggs
  • 2 cups eggnog
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/2 cup crushed peppermint candies (optional, for topping)
  • Powdered sugar, for dusting
  • Maple syrup, for serving

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the bread cubes evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, eggnog, granulated sugar, vanilla extract, peppermint extract, cinnamon, nutmeg, and salt until well combined.
  4. Pour the eggnog mixture evenly over the bread cubes, ensuring all pieces are moistened. Gently press down on the bread to help it soak up the liquid.
  5. Cover the dish and refrigerate for at least 1 hour, or preferably overnight, to allow the bread to soak thoroughly.
  6. Preheat your oven to 350°F (175°C).
  7. If using, sprinkle the crushed peppermint candies over the top of the bake.
  8. Bake for 40-50 minutes, or until the French toast bake is puffed, golden brown, and set in the center. A knife inserted into the center should come out clean.
  9. Let the bake cool for a few minutes before dusting with powdered sugar and serving warm with maple syrup.

Notes

  • Using day-old bread will result in a better texture, as it will absorb more of the eggnog mixture without becoming too mushy.
  • If you don’t have peppermint extract, you can omit it or use a little less if you prefer a milder flavor.
  • For a richer flavor, you can use a combination of eggnog and milk.
