  • 1 loaf of artisan bread
  • 1 cup cooked shredded chicken
  • 1/2 cup basil pesto
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the bread into a grid pattern, cutting about three-quarters of the way through, being careful not to cut through the bottom crust.
  3. In a small bowl, mix together the shredded chicken, basil pesto, mozzarella cheese, and Parmesan cheese.
  4. In another small bowl, whisk together the olive oil and minced garlic. Brush this mixture over the cut surfaces of the bread.
  5. Generously stuff the chicken and cheese mixture into the cuts of the bread.
  6. Wrap the bread tightly in aluminum foil.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Carefully unwrap the bread and bake for an additional 5-7 minutes, uncovered, to crisp up the top.
  9. Garnish with fresh parsley if desired before serving.

  • You can use leftover cooked chicken or rotisserie chicken for convenience.
