1 pound ground beef
1/4 cup breadcrumbs
1 egg
2 tablespoons soy sauce
1/4 teaspoon black pepper
1/4 cup pineapple juice
1/4 cup packed brown sugar
2 tablespoons soy sauce
1 tablespoon cornstarch
1/2 cup pineapple chunks
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, combine ground beef, breadcrumbs, egg, 2 tablespoons soy sauce, and black pepper. Mix well and form into 1-inch meatballs.
Place meatballs on a baking sheet.
Bake for 15-20 minutes, or until cooked through.
While meatballs are baking, prepare the teriyaki sauce. In a small saucepan, whisk together pineapple juice, brown sugar, 2 tablespoons soy sauce, and cornstarch.
Cook over medium heat, stirring constantly, until the sauce thickens.
Add the pineapple chunks to the sauce and cook for 1-2 minutes more.
Add the baked meatballs to the saucepan with the teriyaki sauce. Toss to coat evenly.
Serve warm.
Notes
For a deeper flavor, you can use a mix of ground beef and ground pork.
If you don’t have pineapple juice, you can use water or chicken broth, but the pineapple flavor will be less pronounced.
Feel free to add a pinch of red pepper flakes to the sauce for a little heat.
