A delightful homemade ice cream featuring the nutty flavor of pistachios and the floral aroma of rosewater, perfect for an exotic and sophisticated dessert.

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 5 large egg yolks
  • 1/2 cup shelled pistachios, finely chopped
  • 2 tablespoons rosewater
  • 1/4 teaspoon salt

Instructions

  1. In a medium saucepan, whisk together the heavy cream, whole milk, and half of the granulated sugar (6 tablespoons). Heat over medium heat until the mixture is steaming and small bubbles form around the edges. Do not boil.
  2. In a separate bowl, whisk the egg yolks with the remaining granulated sugar (3 tablespoons) until pale and slightly thickened.
  3. Slowly temper the egg yolks by gradually whisking about half a cup of the hot cream mixture into the yolks. This prevents the yolks from scrambling.
  4. Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture.
  5. Cook over low heat, stirring constantly with a wooden spoon, until the custard thickens enough to coat the back of the spoon (about 170-175°F or 79-80°C). Do not let it boil.
  6. Remove the saucepan from the heat. Stir in the finely chopped pistachios, rosewater, and salt.
  7. Strain the custard through a fine-mesh sieve into a clean bowl. Press plastic wrap directly onto the surface to prevent a skin from forming.
  8. Chill the custard thoroughly in the refrigerator for at least 4 hours, or preferably overnight.
  9. Once chilled, churn the custard in an ice cream maker according to the manufacturer’s instructions.
  10. Transfer the churned ice cream to an airtight container and freeze for at least 2-4 hours to firm up before serving.

Notes

  • For a smoother texture, you can soak the chopped pistachios in a tablespoon of the rosewater for 15 minutes before adding them to the custard.
  • Adjust the amount of rosewater to your preference; start with 1 tablespoon and add more if desired.
  • Ensure your ice cream maker bowl is completely frozen before churning.
