  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup finely chopped pepperoni
  • 1/4 cup pizza sauce or marinara sauce

Instructions

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, garlic powder, and black pepper. This is your dry mix.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  5. Fold in 3/4 cup of the mozzarella cheese and the chopped pepperoni into the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with a small spoonful (about 1/2 teaspoon) of pizza sauce.
  8. Sprinkle the remaining 1/4 cup of mozzarella cheese over the tops of the muffins.
  9. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cheesy pizza cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For freezer lunches, cool the pizza muffins completely, then place them in a freezer-safe bag. Reheat from frozen in the microwave for 45-60 seconds or in a toaster oven until warmed through.
  • If you want more intense flavor, use smoked provolone instead of some of the mozzarella.
  • You can substitute the pepperoni with cooked, crumbled sausage or finely chopped bell peppers for variety.
