2-3 pound pork loin roast
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 cup apple cider
1/4 cup brown sugar
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
Instructions
Preheat your oven to 400°F (200°C).
Pat the pork loin dry with paper towels. Rub it all over with olive oil, salt, and pepper.
Place the pork loin in a roasting pan.
Roast for 20 minutes.
While the pork is roasting, prepare the glaze. In a small saucepan, combine apple cider, brown sugar, Dijon mustard, apple cider vinegar, and thyme.
Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for 10-15 minutes, or until it has thickened slightly into a glaze.
After the initial 20 minutes of roasting, reduce the oven temperature to 350°F (175°C).
Brush half of the apple cider glaze over the pork loin.
Continue roasting for another 30-45 minutes, or until the internal temperature of the pork reaches 145°F (63°C) on a meat thermometer.
Brush the remaining glaze over the pork during the last 10 minutes of cooking.
Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing.
Notes
For a deeper flavor, you can marinate the pork loin in some of the glaze for a few hours before roasting.
Serve with roasted root vegetables or mashed potatoes for a complete meal.
If you don’t have apple cider, you can use apple juice, but the flavor will be less intense.
