Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup pumpkin puree
  • ½ cup milk
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk pancake mix
  • Optional: 1/4 cup chopped pecans or chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, granulated sugar, pumpkin pie spice, baking soda, and salt.
  3. In a separate medium bowl, combine the pumpkin puree, milk, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gently fold in the buttermilk pancake mix and any optional add-ins like pecans or chocolate chips.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure your pumpkin puree is not pumpkin pie filling.
  • For extra flavor, you can top the muffins with a sprinkle of cinnamon sugar before baking.
  • These muffins store well in an airtight container at room temperature for up to 3 days.
