- 1 cup all-purpose flour
- 1/4 cup protein powder (vanilla or unflavored)
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg
- 1 cup milk
- 1/2 cup plain Greek yogurt
- 1/4 cup melted unsalted butter or vegetable oil
- 1 teaspoon vanilla extract
- Pumpkin puree (optional, for extra pumpkin flavor)
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, protein powder, sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
- In a separate medium bowl, whisk together the egg, milk, Greek yogurt, melted butter or oil, and vanilla extract. If using, stir in pumpkin puree.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Lightly grease the waffle iron if needed. Pour about 1/2 cup of batter onto the hot waffle iron.
- Cook for 3-5 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter.
- Serve immediately with your favorite toppings, such as fresh fruit, a drizzle of honey, or a dollop of Greek yogurt.
Notes
- For crispier waffles, you can let the batter rest for 5-10 minutes before cooking.
- Adjust the amount of pumpkin pie spice to your preference.
- You can substitute almond milk or soy milk for regular milk.
- For a vegan option, use a plant-based protein powder and a dairy-free yogurt alternative.
