A healthy and high-protein twist on your favorite takeout dish. This Quinoa Fried Rice uses fluffy quinoa instead of rice for a lighter, more nutritious meal that’s perfect for a quick weeknight dinner.

Ingredients

  • 1 cup cooked quinoa
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/4 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp sesame oil
  • 1 egg, lightly beaten (optional)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add diced onion, carrots, and bell pepper. Stir-fry for 3-4 minutes until slightly tender.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Push the vegetables to one side of the skillet. If using egg, pour the beaten egg into the empty side and scramble until cooked.
  5. Add the cooked quinoa and frozen peas to the skillet.
  6. Pour soy sauce and sesame oil over the mixture.
  7. Stir everything together, breaking up any clumps of quinoa, and cook for another 3-5 minutes until heated through and slightly toasted.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions before serving.

Notes

  • For best results, use cold, pre-cooked quinoa.
  • Feel free to add other vegetables like broccoli, mushrooms, or edamame.
  • Add cooked chicken, shrimp, or tofu for extra protein.
  • Adjust soy sauce to your preference.
