Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried raspberries, crushed
  • 1 tablespoon rose water
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Reserve about 1 1/2 cups of the dough for the crumble topping.
  7. To the remaining dough in the bowl, stir in the crushed freeze-dried raspberries and rose water.
  8. Press this raspberry-rose dough evenly into the bottom of the prepared baking pan.
  9. Spread the fresh raspberries evenly over the dough.
  10. Crumble the reserved dough evenly over the fresh raspberries.
  11. Bake for 30-35 minutes, or until the crumble topping is golden brown and the edges are set.
  12. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For an extra rose flavor, you can add a few drops of food-grade rose extract to the dough.
  • Ensure your freeze-dried raspberries are finely crushed for an even distribution of flavor.
  • Allow the bars to cool completely for clean cuts.
