1 cup (2 sticks) unsalted butter, melted
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
3/4 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1 cup raspberry preserves or jam
1 teaspoon lemon zest (optional, for the swirl)
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk the melted butter and sugar together until just combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
Pour about two-thirds of the batter into the prepared pan and spread evenly.
Drop spoonfuls of the raspberry preserves over the batter. Sprinkle with lemon zest if using.
Dollop the remaining batter over the preserves. Use a knife or skewer to gently swirl the preserves into the batter.
Bake for 25 to 30 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan before lifting out by the parchment overhang and cutting into squares.
Notes
For the fudgiest texture, resist the urge to overbake. The center should still look slightly underdone when you remove them.
You can use fresh or frozen raspberries, mashed lightly, instead of preserves for a tangier swirl. Reduce the amount slightly if using fresh fruit.
Chill the brownies for at least two hours before cutting for the cleanest slices.
