  • 4 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup chopped bittersweet chocolate

Instructions

  1. In a large saucepan, combine the Arborio rice, whole milk, heavy cream, granulated sugar, unsweetened cocoa powder, red food coloring, vanilla extract, and salt.
  2. Stir everything together until well combined.
  3. Bring the mixture to a gentle simmer over medium heat, stirring frequently to prevent sticking.
  4. Reduce the heat to low and continue to cook, stirring often, for 25-30 minutes, or until the rice is tender and the pudding has thickened to your desired consistency.
