1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 cup chopped fresh rhubarb (about 1/2 inch pieces)
1/4 cup milk
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this dry mixture aside.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix only until just combined; do not overmix.
Gently fold in the chopped rhubarb pieces.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
Toss the chopped rhubarb lightly in one tablespoon of flour before folding it into the batter. This helps prevent the rhubarb from sinking to the bottom of the loaf.
For a glazed finish, whisk together 1/2 cup powdered sugar and 2 tablespoons of milk, then drizzle over the cooled bread.
