A recipe for tender roasted carrots coated in a sweet and spicy hot honey butter glaze.

  • 1.5 lb carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 3 tablespoons honey
  • 1 teaspoon hot sauce (or 1/2 teaspoon red pepper flakes)
  • 1/2 teaspoon apple cider vinegar
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the prepared carrots with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
  3. Roast the carrots for 25 to 30 minutes, turning them halfway through, until they are tender and slightly caramelized.
  4. While the carrots roast, prepare the hot honey butter. In a small saucepan over low heat, melt the butter.
  5. Stir in the honey, hot sauce (or red pepper flakes), and apple cider vinegar until combined. Keep warm.
  6. Once the carrots are done roasting, transfer them to a serving bowl.
  7. Pour the hot honey butter mixture over the carrots and toss gently to coat them evenly.
  8. Garnish with fresh chopped parsley before serving.

Notes

  • For a more intense spice, increase the hot sauce to 1.5 teaspoons.
  • If you prefer a thicker glaze, let the butter mixture simmer for one minute longer before removing it from the heat.
  • You can use baby carrots, but adjust the roasting time down by about 5 to 7 minutes.
