  • 1 large head cauliflower, cut into florets
  • 1 whole head garlic
  • 2 tablespoons olive oil
  • 1/4 cup heavy cream (or unsweetened almond milk for lower fat)
  • 2 tablespoons butter (or ghee)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Optional: A pinch of nutmeg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the top off the head of garlic, exposing the cloves. Drizzle with 1 tablespoon of olive oil. Wrap the garlic tightly in aluminum foil.
  3. Toss the cauliflower florets with the remaining 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet.
  4. Roast the cauliflower and the wrapped garlic for 25 to 35 minutes. The cauliflower should be tender when pierced with a fork, and the garlic should be soft and golden.
  5. Once cooled slightly, squeeze the soft, roasted garlic pulp from its skin into a food processor or high-speed blender.
  6. Add the roasted cauliflower florets, heavy cream, and butter to the food processor.
  7. Blend until completely smooth and creamy. Stop and scrape down the sides as needed.
  8. Taste and adjust seasoning with more salt, pepper, or a pinch of nutmeg, if you like.
  9. Serve immediately while warm.

Notes

  • For the creamiest texture, make sure your cauliflower is fully cooked before blending.
  • If you prefer a thinner consistency, add a splash more cream or a tablespoon of hot water until you reach your desired texture.
  • Roasting the garlic first prevents a sharp, raw garlic taste, giving you a sweet, mellow flavor instead.
