Ingredients
Scale
1 sheet puff pastry, thawed
4 ounces goat cheese, softened
2 tablespoons heavy cream
1 tablespoon fresh rosemary, finely chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
Optional: honey for drizzling
Instructions
Preheat your oven to 400°F (200°C).
Unfold the puff pastry sheet onto a lightly floured surface. Cut into desired shapes, such as squares or rounds.
Place the pastry shapes onto a baking sheet lined with parchment paper. Prick the centers with a fork, leaving a small border around the edges.
Bake for 12-15 minutes, or until golden brown and puffed. Let cool slightly.
In a medium bowl, whip the softened goat cheese with heavy cream until smooth and fluffy.
Stir in the chopped fresh rosemary, salt, and pepper.
Spoon or pipe the goat cheese mixture into the cooled tart shells.
Garnish with a bit more fresh rosemary if desired. Drizzle with honey before serving, if you like.
Notes
You can make the goat cheese filling ahead of time and store it in the refrigerator.
Experiment with different herbs like thyme or chives for variation.
For a more rustic presentation, you can press the puff pastry into a mini muffin tin before baking.
