Make the ultimate cheesy appetizer with this simple Velveeta Rotel Dip recipe. It is quick to prepare on the stovetop and always disappears first at parties.

  • 1 pound ground beef or sausage
  • 1 (10 ounce) can Ro-Tel Original Diced Tomatoes and Green Chilies, undrained
  • 1 (16 ounce) package Velveeta cheese, cubed
  • 1 tablespoon taco seasoning (optional, for extra flavor)

Instructions

  1. Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease completely.
  2. Add the undrained Rotel tomatoes and the cubed Velveeta cheese to the skillet with the meat.
  3. Stir the mixture constantly over low heat until the Velveeta cheese is completely melted and the dip is smooth and creamy. Do not let the mixture boil.
  4. If using, stir in the taco seasoning now.
  5. Transfer the dip to a small slow cooker if you plan to keep it warm for a party, or serve immediately with tortilla chips.

Notes

  • For a slow cooker version, combine all ingredients in a small slow cooker and cook on low for 1 to 2 hours, stirring occasionally until melted and smooth.
  • You can substitute Velveeta with a mix of sharp cheddar and Monterey Jack cheese, but you will need to add 1/4 cup of milk or evaporated milk to help it melt smoothly.
  • Serve this dip hot with sturdy tortilla chips, crackers, or vegetable sticks.
