4 Salmon fillets (about 6 oz each)
1/4 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon soy sauce or tamari
1 tablespoon brown sugar
2 cloves garlic, minced
1 teaspoon dried dill
1/2 teaspoon black pepper
Instructions
In a medium bowl, whisk together the olive oil, lemon juice, soy sauce, brown sugar, minced garlic, dill, and black pepper until the sugar dissolves.
Place the salmon fillets in a resealable plastic bag or a shallow dish. Pour the marinade over the salmon, ensuring all sides are coated.
Refrigerate and marinate the salmon for 30 minutes. Do not marinate longer than 1 hour, as the acid in the lemon juice can begin to break down the fish texture.
Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent sticking.
Remove the salmon from the marinade, letting excess drip off. Discard the remaining marinade.
Place the salmon skin-side down on the oiled grates. Grill for 4 to 6 minutes per side, depending on thickness, until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
Remove from the grill and serve immediately.
Notes
For extra flavor, reserve about 2 tablespoons of the marinade before adding the raw fish, and brush this reserved marinade onto the salmon during the last minute of grilling.
If you prefer a smokier flavor, add 1/2 teaspoon of smoked paprika to the marinade mixture.
To prevent sticking, make sure your grill grates are clean and well-oiled before placing the fish down.
