1 quart vanilla ice cream, softened
1 cup salted caramel sauce
1 cup crushed pretzels
12 chocolate chip cookies, slightly stale or cooled
Instructions
Line a baking sheet with parchment paper.
Spread half of the cookies, bottom-side up, on the prepared baking sheet.
Spoon about 1/4 cup of softened ice cream onto each cookie.
Drizzle about 2 tablespoons of salted caramel sauce over the ice cream.
Sprinkle about 2 tablespoons of crushed pretzels over the caramel.
Top with the remaining cookies, pressing gently to form sandwiches.
Freeze for at least 2 hours, or until firm.
