6 cups Rice Krispies cereal
10 ounces marshmallows (mini or regular)
4 tablespoons unsalted butter
1/2 cup granulated sugar
1/4 cup heavy cream
1/2 teaspoon sea salt (for caramel)
1/4 teaspoon vanilla extract
Pinch of salt (for cereal mixture)
Instructions
Lightly grease a 9×13 inch baking pan. Set aside.
In a large saucepan, melt the butter over low heat.
Add the granulated sugar, heavy cream, and sea salt for the caramel. Stir constantly until the sugar dissolves and the mixture simmers gently.
Cook the caramel mixture for 5 to 7 minutes, stirring often, until it reaches a light amber color. Remove from heat and stir in the vanilla extract.
Pour half of the prepared caramel mixture into a small bowl and set aside for drizzling later.
Return the saucepan with the remaining caramel to low heat. Add the marshmallows and stir until completely melted and smooth. Do not let it brown further.
Remove the marshmallow mixture from the heat. Stir in the pinch of salt for the cereal base.
Quickly fold in the Rice Krispies cereal until it is evenly coated.
Press the mixture firmly and evenly into the prepared baking pan. Work fast; it sets quickly.
Drizzle the reserved caramel evenly over the top of the treats.
Let the treats cool completely before cutting into squares.
Notes
Use fresh marshmallows for the best, chewiest texture.
For an extra gooey center, slightly undercook the caramel before adding the marshmallows.
If the mixture is too stiff to spread, gently warm the pan briefly on the stovetop over very low heat.
