One-Pot Cheesy Smoked Sausage and Rice Skillet

Fix that broken promise of a bland dinner with this easy, hearty, one-pot cheesy smoked sausage and rice skillet. It is quick, flavorful, and minimizes cleanup for your busy weeknight.

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup chopped fresh parsley, for garnish (optional)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and cook until lightly browned on both sides, about 4 to 5 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the skillet.
  2. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the uncooked rice, coating it in the fat. Cook for 1 minute, stirring constantly.
  4. Pour in the chicken broth, cream of chicken soup, Italian seasoning, paprika, and black pepper. Stir well to combine everything. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15 minutes, or until the rice has absorbed most of the liquid. Do not lift the lid during this time.
  6. Remove the skillet from the heat. Stir in the milk and the reserved smoked sausage. Cover the skillet again and let it stand for 5 minutes to allow the rice to steam and finish cooking.
  7. Uncover the skillet. Stir in the shredded cheddar cheese until it is fully melted and the mixture is creamy.
  8. Serve immediately, garnished with fresh parsley if you are using it. This is a complete, hearty meal right from one pan.

Notes

  • For a Cajun twist, substitute the Italian seasoning with 1 teaspoon of Cajun seasoning blend.
  • If you prefer a thinner consistency, add an extra 1/4 cup of milk or broth when stirring in the cheese.
  • You can add 1 cup of frozen peas or corn during the last 5 minutes of simmering for extra vegetables.
