  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1 (19 ounce) package refrigerated cheese tortellini
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Brown the Italian sausage in a large skillet over medium heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with juice), tomato sauce, oregano, basil, and red pepper flakes. Stir well.
  5. Add the chicken broth and bring the mixture to a simmer.
  6. Add the refrigerated tortellini to the skillet. Stir to coat, cover the skillet, and cook according to tortellini package directions, usually 5-8 minutes, until the pasta is tender.
  7. Reduce the heat to low. Stir in the fresh spinach until it wilts.
  8. Stir in the heavy cream and Parmesan cheese until the sauce is creamy.
  9. Season with salt and pepper to your preference. Serve immediately.

Notes

  • Use mild or hot Italian sausage depending on your preference for spice.
  • If you do not have refrigerated tortellini, frozen works; you may need to add a few extra minutes of simmering time.
  • For a thicker sauce, simmer uncovered for a few minutes before adding the cream.
