1 pound breakfast sausage
1 pound potatoes, diced small
1 medium onion, chopped
1 bell pepper, chopped (any color)
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 2-4 eggs for topping
Instructions
Cook the breakfast sausage in a large skillet over medium heat, breaking it up as it cooks. Drain off excess grease.
Add the diced potatoes to the skillet with the sausage. Cook, stirring occasionally, until the potatoes start to brown and soften, about 10-12 minutes.
Add the chopped onion and bell pepper to the skillet. Cook until the vegetables soften, about 5 minutes more.
Stir in the minced garlic, salt, and pepper. Cook for 1 minute until fragrant.
If desired, make small wells in the hash and crack eggs directly into them. Cover the skillet and cook until the eggs reach your preferred doneness.
Serve immediately.
Notes
For crispier potatoes, cook them in a separate pan with a little oil before mixing them with the sausage.
You can substitute turkey sausage for a leaner option.
Adding a dash of hot sauce at the end gives the hash a nice kick.
