These savory muffins are a clever way to use leftover Thanksgiving stuffing and gravy. Packed with sausage and baked into convenient muffin cups, they’re perfect for a quick breakfast or brunch.

Ingredients

Scale
  • 2 cups cooked sausage stuffing
  • 1 cup prepared gravy
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/4 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 teaspoon black pepper
  • Optional: Pinch of dried sage

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or use paper liners.
  2. In a large bowl, combine the cooked sausage stuffing and prepared gravy. Mix well until the stuffing is moistened.
  3. Add the beaten egg, flour, shredded cheese, black pepper, and optional sage to the stuffing mixture. Stir until everything is just combined. Do not overmix.
  4. Spoon the mixture evenly into the prepared muffin cups, filling each about two-thirds full.
  5. Bake for 20-25 minutes, or until the muffins are golden brown and set in the center.
  6. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can use any type of cooked sausage stuffing.
  • If your gravy is very thick, you might need to add a tablespoon or two of milk or water to reach a batter-like consistency.
  • These muffins freeze well. Let them cool completely, then store in an airtight container in the freezer for up to 1 month. Reheat in the oven or microwave.
