Ingredients
Scale
1 pound fresh green beans, trimmed
4 slices thick-cut bacon, cut into 1/2-inch pieces
2 cloves garlic, minced
1 tablespoon water
1/4 teaspoon salt, or to taste
1/8 teaspoon black pepper, or to taste
Instructions
Place the bacon pieces in a large skillet over medium heat. Cook slowly, stirring occasionally, until the bacon is fully crispy and the fat is rendered, about 8 to 10 minutes.
Use a slotted spoon to remove the crispy bacon pieces from the skillet and set them aside on a paper towel-lined plate. Leave the rendered bacon fat in the skillet.
Increase the heat to medium-high. Add the trimmed green beans to the hot bacon fat in the skillet. Sauté for 5 to 7 minutes, stirring frequently, until the beans are tender-crisp.
Add the minced garlic to the skillet and cook for 1 minute until fragrant. Do not let the garlic burn.
Add 1 tablespoon of water to the skillet, cover immediately, and let the beans steam for 1 minute. This helps them cook through evenly.
Remove the lid. Season the beans with salt and pepper. Toss to combine.
Stir most of the crispy bacon back into the green beans.
Transfer the sautéed green beans to a serving dish and sprinkle the remaining crispy bacon over the top before serving.
Notes
For the crispiest bacon, start cooking it in a cold skillet before turning on the heat. This allows the fat to render slowly.
If you have more than 2 tablespoons of bacon fat remaining after cooking the bacon, carefully pour off the excess before sautéing the beans.
Use fresh, crisp green beans for the best texture. Avoid overcooking them; they should still have a slight snap.
