2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup cold unsalted butter, cut into cubes
1 cup shredded cheddar cheese
1/4 cup chopped fresh chives
3/4 cup heavy cream, plus more for brushing
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese and chopped chives.
Make a well in the center and pour in the heavy cream. Stir until just combined. Do not overmix.
Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round.
Cut the round into 8 wedges.
Place the wedges on the prepared baking sheet. Brush the tops with a little extra heavy cream.
Bake for 15-18 minutes, or until golden brown and puffed up.
Let cool slightly on a wire rack before serving.
Notes
For extra flavor, you can add a pinch of garlic powder to the dry ingredients.
If you don’t have fresh chives, you can substitute with 2 tablespoons of dried chives, but fresh will offer a brighter flavor.
These scones are best enjoyed warm, but they also reheat well.
