1 (16 ounce) can refried beans, regular or vegetarian
1 cup guacamole (store-bought or homemade)
1 cup sour cream
1 teaspoon taco seasoning mix
1 cup salsa, drained well
1 cup shredded cheddar or Mexican blend cheese
1/2 cup chopped fresh tomatoes
1/4 cup sliced black olives, drained
Optional garnish: chopped green onions
Instructions
Spread the refried beans evenly across the bottom of a clear 9-inch pie dish or shallow serving platter. This helps show off your layers.
In a small bowl, mix the sour cream with the taco seasoning until fully combined. Spread this seasoned sour cream layer evenly over the beans.
Gently spread the guacamole layer over the seasoned sour cream. Try not to disturb the layer beneath.
Spoon the drained salsa evenly over the guacamole layer.
Sprinkle the shredded cheese over the salsa.
Top the cheese with the chopped fresh tomatoes.
Finish the dip by scattering the sliced black olives over the tomatoes.
If using, sprinkle with green onions.
Chill the dip for at least 30 minutes before serving to allow the flavors to meld. Serve with tortilla chips.
Notes
To prevent the guacamole from browning, you can lightly brush the top with a thin layer of lime juice before adding the next layer, or ensure the salsa layer covers it completely.
For the best presentation, use a clear glass dish so your guests can see all seven layers.
Drain your salsa very well; excess liquid will make the lower layers runny.
