Sheet Pan Garlic Butter Shrimp and Broccoli

Prepare a flavorful weeknight dinner using shrimp and broccoli cooked together on one sheet pan with a rich garlic butter sauce.

  • 1 pound large shrimp, peeled and deveined
  • 1 pound broccoli florets
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the melted butter, minced garlic, Italian seasoning, salt, and pepper.
  3. Place the broccoli florets on the prepared baking sheet. Drizzle half of the garlic butter mixture over the broccoli and toss to coat evenly. Spread the broccoli into a single layer.
  4. Roast the broccoli for 8 minutes.
  5. While the broccoli roasts, place the peeled shrimp in a medium bowl. Pour the remaining garlic butter mixture over the shrimp and toss gently to coat.
  6. Remove the baking sheet from the oven. Push the partially cooked broccoli to one side of the pan. Add the seasoned shrimp to the empty side of the sheet pan, spreading them into a single layer.
  7. Return the sheet pan to the oven and roast for an additional 6 to 8 minutes, or until the shrimp are pink and cooked through and the broccoli is tender-crisp. Do not overcook the shrimp.
  8. Remove from the oven. Drizzle the fresh lemon juice over the shrimp and broccoli. Sprinkle with fresh parsley before serving.

Notes

  • For best results, ensure your shrimp are completely thawed before seasoning and cooking.
  • If your broccoli florets are very large, cut them into smaller, uniform pieces so they cook at the same rate as the shrimp.
  • Serve this dish over cooked rice, quinoa, or enjoy it as a low-carb meal.
