Make this simple sausage and peppers recipe on one sheet pan for an easy weeknight dinner with minimal cleanup.

  • 1 pound Italian sausage links (sweet or hot)
  • 3 large bell peppers (red, yellow, green), sliced into 1-inch strips
  • 1 large yellow onion, cut into thick wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the sliced bell peppers and onion wedges.
  3. Drizzle the vegetables with 1 tablespoon of olive oil. Sprinkle with half of the oregano, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Arrange the seasoned vegetables on one half of the prepared baking sheet in a single layer.
  5. Place the sausage links on the other half of the baking sheet. Drizzle the sausages with the remaining 1 tablespoon of olive oil and sprinkle with the remaining oregano, garlic powder, salt, and pepper.
  6. Bake for 20 minutes.
  7. Remove the pan from the oven. Use tongs to turn the sausages and toss the vegetables slightly.
  8. Return the pan to the oven and bake for another 10 to 15 minutes, or until the sausage is cooked through (internal temperature reaches 160 degrees Fahrenheit) and the vegetables are tender and slightly charred.
  9. Serve immediately.

Notes

  • You can substitute Italian sausage with kielbasa or smoked sausage. Adjust cooking time if using pre-cooked sausage.
  • For a heartier meal, add 1 pound of small cubed potatoes to the vegetable mix, tossing them with the oil and seasonings.
  • Serve this dish in crusty rolls for sandwiches or over cooked rice or pasta.
