1 pound lean ground beef
1 medium onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 cup beef broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
Salt and black pepper to taste
2 large sweet potatoes, peeled and cubed
1/4 cup milk
2 tablespoons butter

Instructions
Preheat your oven to 400°F (200°C).
Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
Add chopped onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
Stir in minced garlic, thyme, and rosemary. Cook for 1 minute more until fragrant.
Pour in beef broth, add Worcestershire sauce and tomato paste. Stir to combine. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly. Season with salt and pepper to taste.
While the filling simmers, cook the sweet potatoes. Place cubed sweet potatoes in a pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
Drain the sweet potatoes well. Return them to the pot and mash with milk and butter until smooth. Season with salt and pepper.
Spread the mashed sweet potatoes evenly over the beef filling in the skillet. You can create decorative peaks with a fork if desired.
Bake for 20-25 minutes, or until the topping is lightly golden and the filling is bubbly.
Let stand for 5 minutes before serving.
Notes
For an extra rich topping, use half-and-half instead of milk.
Add a pinch of nutmeg to the sweet potato mash for a warm flavor.
Feel free to add other vegetables to the filling, such as peas or corn.
