This Shrimp Fried Rice recipe is a delicious and quick meal that you can make in just 15 minutes. It’s better than takeout and perfect for a weeknight dinner when you want a flavorful shrimp dish without the wait.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 cups cooked rice, cold
  • 1 cup frozen peas and carrots
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and cook until pink and cooked through, about 2-3 minutes. Remove shrimp from skillet and set aside.
  3. Add garlic and ginger to the skillet and cook until fragrant, about 30 seconds.
  4. Add cooked rice and frozen peas and carrots. Stir-fry for 2-3 minutes until heated through.
  5. Push rice to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
  6. Add cooked shrimp back to the skillet.
  7. Drizzle with soy sauce and sesame oil.
  8. Toss everything together until well combined and heated through.

Notes

  • Use cold, day-old rice for the best texture.
  • Adjust soy sauce to your preference.
  • For extra flavor, add a pinch of white pepper.
