A creamy, comforting Skillet Beef and Mushroom Stroganoff. This classic dish is made in one pan for an easy and delicious weeknight meal. Tender beef, earthy mushrooms, and a rich sour cream sauce come together for a satisfying dinner.

  • 1 tablespoon olive oil
  • 1 pound beef sirloin, cut into thin strips
  • 1 pound mushrooms, sliced
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1.5 cups beef broth
  • 0.5 cup sour cream
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • Cooked egg noodles, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add beef and cook until browned. Remove beef from skillet and set aside.
  2. Add mushrooms and onion to the skillet. Cook until softened and lightly browned, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle flour over the mushroom and onion mixture. Stir and cook for 1 minute.
  5. Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Reduce heat to low. Stir in sour cream and Dijon mustard until well combined and the sauce is creamy. Do not boil after adding sour cream.
  7. Return the browned beef to the skillet. Season with salt and pepper to taste.
  8. Heat through for a few minutes.
  9. Serve immediately over cooked egg noodles.

Notes

  • For a richer flavor, you can use beef broth made from bouillon.
  • If you don’t have Dijon mustard, regular yellow mustard can be used, but the flavor will be slightly different.
  • You can substitute the beef sirloin with other cuts like flank steak or sirloin tip.
