  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 8 ounces fettuccine pasta
  • 2 cloves garlic, minced
  • 1 1/2 cups low-fat milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup plain nonfat Greek yogurt
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a bowl, toss chicken with olive oil, Italian seasoning, salt, and pepper.
  3. Cook chicken in a large skillet over medium-high heat until browned and cooked through. Remove chicken from skillet and set aside.
  4. Cook fettuccine according to package directions. Drain, reserving about 1/2 cup of pasta water.
  5. Return skillet to medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  6. Pour in low-fat milk and bring to a simmer, stirring occasionally.
  7. In a small bowl, whisk together Parmesan cheese and Greek yogurt until smooth.
  8. Gradually whisk the Parmesan-yogurt mixture into the simmering milk. If a thicker sauce is desired, whisk cornstarch with a little reserved pasta water and add to the skillet, stirring until thickened.
  9. Return the cooked chicken to the skillet. Add the drained fettuccine and toss to coat with the sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  10. Season with additional salt and pepper if needed.
  11. Garnish with fresh parsley before serving.

Notes

  • For a vegetarian option, omit the chicken and add sautéed mushrooms or broccoli.
  • Adjust the amount of Greek yogurt to achieve your preferred level of creaminess.
  • If you don’t have Greek yogurt, sour cream can be used as a substitute, though it may slightly alter the flavor.
