  • 3 pounds beef chuck roast, trimmed and cut into 2-inch chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 (7 ounce) can chipotle peppers in adobo sauce, undrained
  • 1/4 cup apple cider vinegar
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth

Instructions

  1. Season beef chunks generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear beef on all sides until browned.
  3. Transfer browned beef to your slow cooker.
  4. Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in chipotle peppers with adobo sauce, apple cider vinegar, chili powder, cumin, and oregano. Cook for 1 minute, stirring constantly.
  6. Pour the chipotle mixture over the beef in the slow cooker.
  7. Add beef broth to the slow cooker.
  8. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender and shreds easily.
  9. Remove beef from the slow cooker and shred with two forks.
  10. Return shredded beef to the slow cooker and stir into the sauce. Serve warm.

Notes

  • For spicier barbacoa, add more chipotle peppers or a pinch of cayenne pepper.
  • If you don’t have chipotle peppers in adobo sauce, you can substitute with 2 tablespoons of adobo sauce and 1-2 minced chipotle peppers.
  • This barbacoa is great for meal prep and can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
