Enjoy restaurant-style butter chicken at home with this easy slow cooker recipe. You’ll get tender chicken in a creamy, mildly spiced tomato sauce with minimal effort.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Place chicken pieces in the slow cooker.
  2. In a separate bowl, combine olive oil, onion, garlic, ginger, garam masala, cumin, paprika, turmeric, cayenne pepper, salt, and black pepper.
  3. Pour the spice mixture over the chicken in the slow cooker.
  4. Add the crushed tomatoes and chicken broth to the slow cooker. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Stir in the heavy cream during the last 30 minutes of cooking.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • You can use chicken breasts instead of thighs, but thighs tend to stay more tender in the slow cooker.
  • Adjust the cayenne pepper to your spice preference.
  • For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last hour of cooking.
  • Serve with rice or naan bread.
